An email arrives in my inbox announcing the opening of Mayfair’s newest fine dining restaurant. Sparrow Italia, it promises, will be offering something called Modern Coastal Italian cuisine. Great. Mayfair isn’t short on seafood restaurants thanks to the likes of Scott’s, Miro and Bentley’s Oyster Bar. Yet it is lacking a restaurant that combines seafood with an emphasis on quintessential Italian flavours.

The high-energy Mexican steakhouse in the courtyard between the Aria Resort and Casino and the Shops at Crystals integrates fire at every turn. Cocktails like the Los Muertos are set aflame. So too are the numerous candles and torches that illuminate the bar, private room, and main dining room — not to mention the fire dancers and fire breathers who perform during dinner. Notable dishes here include the satisfyingly gooey queso fundido, the light and flavorful branzino, and the guacamole with pomegranate seeds.

Work up an appetite at the pool and clean up back in the hotel suite before heading out to dine at Toca Madera, SW Steakhouse, STK, Carversteak or one of the many other fine eateries in the Las Vegas area. Whichever way you like your filet or ribeye, these spots have got you covered.

Two smaller private dining rooms are encased in glass on two sides and located between the main bar and the dining room — offering guests a secluded spot that is still in full view of the fire dancers that pass through the main restaurant. The larger private room has its own bar.

Although Le Calvez refined the menu, it’s a collaborative effort. Noble 33’s co-founders Tosh Berman and Mikey Tanha, and the corporate executive chef AJ McCloud, were just as involved. For them, ensuring every dish added a soupçon of theatricality to each table was paramount. Expect flames, dry ice, dishes served on hot rocks, and over-the-top, American-sized mains like an epic seafood tower piled high with top shelf Piscean delights.
